Lemon Bars
My mom wanted me to make these lemon bars while I was at her house yesterday. Unfortunately, there wasn't enough time before we had to go home and I promised her I'd do it next time I was there. But, I snapped a pic of the recipe and I wanted to share. I need to make these and soon! It looks really easy!
Lemon Bars
Gina Nelson
1 c softened butter
1/2 c powdered sugar
2 c flour
dash of salt
Combine and mix well. Press into 9x13 pan. Bake at 350 for 15 mintues or until golden brown.
Filling:
4 beaten eggs
6 tbsp lemon juice
2 c sugar
1/4 c flour
Combine flour and sugar. Mix in beaten eggs and lemon juice. Pour onto the slightly cooled crust. Bake at 350 for 25 minutes or until set. Cool and sprinkle with powdered sugar. Makes 3 dozen 1.5 inch bars.

Sin In A Cup
This is the best microwave brownie you'll ever put in your face. But, it packs a 550 calorie punch, so eat at your own risk. You can also cut the recipe in half, but this would require more cook time fiddling on your part. Which isn't that big a deal anyway.
Microwave Brownie
4 tbsp sugar
4 tbsp flour
2 tbsp cocoa powder
2 tbsp vegetable oil
2 tbsp cold water
Combine the sugar, flour and cocoa in a large coffee mug (or a ceramic bowl), mix well with a fork. Add oil and water and mix well until mixture pulls away from sides of mug. I find that using a mashing motion with the fork near the side of the mug while I turn the mug finishes up the mixing nicely. Pat down level with the fork. Cook in microwave for 1-2 minutes.
USE AN OVEN MITT!!! LET COOL UNTIL THE BOTTOM OF THE MUG IS JUST WARM BEFORE EATING!!! THESE BROWNIES AND SOME COFFEE MUGS CAN GET VERY HOT AND STAY HOT FOR LONG PERIODS!!!

My Notes:
You'll probably need to expiriment with time for your particular microwave. I say start at 90 seconds and adjust accordingly. You won't get sick if it's a bit undercooked either as there is no egg in it.
Eat it with a spoon. A fork just won't get all the bits of fudgy goodness, leaving them behind and you will be smitten by the dessert Gods.
My favorite way to eat this is warm amd topped with a scoop of vanilla ice cream. Ahmigahd.
